Recipe: The. BEST. Salmon. Ever.

I got the idea from this recipe, but mostly it's my own. I'm in love with it!

Salmon fillet, medium thickness
Olive oil
For the rub: salt, pepper, coriander, cumin, paprika, onion powder. I also throw in a little curry sometimes, and a little chili pepper.

For the salmon bed:
2 avocadoes, peeled, seeded and diced
1 pear, sliced thinly (you only use 1/2 of the pear)
1 small lime
cilantro, as much as you'd like, chopped (I love it so much, I'll use the whole bunch)
---mix the avocado and pear together, squeeze the lime into it---
tortilla chips, somewhat crushed into medium chunks

Rub olive oil on the fish, coat with the spice mixture and toss on the grill, cook until done to your preferred level of doneness.

Put the crushed tortilla chips on the plate, and put the avocado mixture on top of it.
Set the salmon onto the avocado mixture - and viola! The MOST AMAZING TASTE EVER is now sitting on your plate. It surprises me every time how wonderful my mouth feels.....

For this, I didn't have pear and went straight avocado and cilantro, but it's still fabulous! You can also add pomegranite seeds to it to make it sweeter if you'd like.

Brad prefers his a little more simply done - straight up lemon pepper and olive oil, no fish bed, but how can I complain when he wants me to put LESS work into it and is just as happy?
